I was using eval metering and when referring to manual I was refering to the exposure rather than manual or auto focus ( the latter using AI servo mode to track. At Gigrin and many other places where they fly birds, they will fly both against the sky and trees etc and if you use one of the semi auto modes, ie Tv or Av, then you are likely to get either under or over exposed shots. So by using manual metering and metering off a neutal or mid tone (something like the grass) then no matter if the bird is against the sky or something darker there is a good chance or a good exposure, unless of course the light changes, but thats another story
