I know it sounds like something Spongebob Squarepants might eat, but they do exist!
This clump of Sea Carrot heads shows the various stages of their development - they start small and pink and then expand to a white almost globe-like umbelliferous head, before maturing into an upturned cup shape of seeds. The white stage retains one small area of the original pink, apparently as an enticement to insects.
