Well chaps I'm blown away with all the quick replies. You've said all the things I have been saying to myself. IF I can afford it (or IF as Ian says she lets me afford it) then go for the IS version. Paul L's reply is interesting as he is a guy that uses long lenses a lot and posts some stunners.
I think that I need to hold the IS and non IS version to see what the difference actually feels like. Based on that I'll make my choice.
